The original Pernod was actually an absinthe, but when the allegedly hallucinatory liquor was outlawed in 1915 the recipe was adjusted slightly to create the now thoroughly iconic Pastis.

It is made with over fifteen botanicals including anise, fennel, coriander, hyssop, and mint, coming together to deliver an intense black liquorice flavour with a rich backing of perfumed herbs and spices.

Perfect Serve – Pernod is traditionally diluted with a splash of chilled water to release its herbal fragrances and create a long, refreshing drink. Because of its unique chemical make-up, Pernod becomes milky when it mixes with water and provides a delightfully intriguing cloudy look.
