An aromatic rum from Mount Gay, Eclipse is a medium-bodied heritage rum blend from Barbados. It is distilled in traditional column and pot copper stills before maturing. This warm, layered rum has a mixture of fruity and floral notes, balanced with a touch of toasted oak imparted from aging for two years in ex-American whiskey charred oak barrels. The distinctive flavour is a blend of banana, vanilla, apricot, sugared almonds, Caribbean spices and oak smoke. An aromatic rum which works in rum punches and rum old-fashioneds. Perfect Serve – Try A Mount Gay Rum Punch You Will Need: • 45ml Mount Gay Eclipse • 22.5ml Giffard Gomme Syrup • 15ml Freshly Squeezed Lime Juice • 90ml Soda Water • 1 dash of Angostura Bitters Method: • Fill a tall glass with crushed ice • Add the rum, syrup, lime juice to the ice and stir • Top with the soda water and finish with a dash of Angostura Bitters • Add lemon and lime wedges and top with some freshly grated nutmeg
