Tequila Rose Anti-Gravity Cake

How to Make a Tequila Rose Anti-Gravity Cake  

Ingredients

Cake: 

  • 225g unsalted butter (plus a little extra for greasing) 
  • 225g white caster sugar  
  • 225g self-raising flour 
  • 4 large eggs 
  • 1 tsp vanilla extract 
  • 1 tsp baking powder 
  • ¼ tsp salt 

Tequila Rose Buttercream Icing: 

  • 50ml Tequila Rose 
  • 450g icing sugar 
  • 110g unsalted butter 
  • A few drops of pink food colouring 

 Decoration: 

  •  200g fresh strawberries 
  • 100g Strawberry Jam 
  • Wooden skewer/chopstick 

 

Method: 

 Cake: 

  1. Preheat the oven to 180° and grease 2 round baking tins that are roughly 20cm in length 
  2. Whisk the butter and sugar until light and fluffy then mix in the vanilla extract 
  3. Add the eggs one at a time and beat together until combined 
  4. Slowly fold in the flour, baking powder, and salt  
  5. Evenly divide your finished cake mix between the 2 cake tins and bake in the oven for 22-25 minutes 
  6. Once cooked, carefully remove the cake from the tins and leave to cool on a wire rack 

 Buttercream: 

  1. In a large bowl, beat the butter until soft and creamy 
  2. Gradually add the icing sugar and thoroughly stir together 
  3. Stir in your Tequila Rose miniature (remember to keep the bottle for decoration!)  
  4. Add 2 drops of pink food colouring – just enough to create a light pastel tone that matches the colour of Tequila Rose  

 Construction: 

  1. Take one of the cakes and use a knife to shave the top so that it’s completely level 
  2. Spread a generous serving of jam on the bottom cake layer then sandwich the two cakes together 
  3. Cover the entire cake with Tequila Rose buttercream icing 
  4. Take a wooden skewer and pierce it fully through the middle of the cake so that it’s coming out at a 45° angle 
  5. Completely coat the skewer in the remaining buttercream. The end result should look as though there is liquid pouring from the Tequila Rose bottle, so make sure the icing is nice and smooth and have it pool at the base 
  6. Take your empty Tequila Rose miniature and place it upside down over the end of the skewer – it should seem like it’s hanging in mid-air! 
  7. Chop some strawberries into thin slices and stick them the sides of the cake for a final decoration
