Easy Tequila & Lime Margarita Cake

A margarita cocktail is a classic mix of tequila, lime juice, and triple sec that’s utterly synonymous with summer. With such divine flavours, it only makes sense that this iconic cocktail be transformed into a sumptuous boozy bake. 

We’ve not held back with this recipe, creating a limey cake that is drenched in margarita syrup and topped with indulgent tequila icing. Ideal for summer gatherings and tequila lovers’ birthdays, this easy margarita cake is guaranteed to be a favourite thanks to its incredible moistness and light, tropical taste.

Ingredients

Cake:

  • 250g all-purpose flour 
  • 325g white caster sugar 
  • 200ml milk 
  • 175ml vegetable oil 
  • 2 large eggs 
  • 1 tbsp lime zest 
  • 1tsp vanilla extract 
  • 1 ½ tsp baking powder 
  • 1 tsp salt 

Margarita Syrup: 

Tequila Icing:

  • 100g butter, room temperature 
  • 200g icing sugar 
  • 30ml Patron Citronge Lime Tequila 
  • 30ml fresh lime juice 
  • Pinch of salt 

 

How to Make a Margarita Cake

  1. Preheat the oven to 180° and lightly grease a 9” cake tin 
  2. Begin by beating together the sugar and eggs until thickened, then stir in the milk, oil, vanilla, and lime zest 
  3. Gradually sift in the flour, baking powder, and salt and mix thoroughly 
  4. Pour the batter into the cake tin and place in the oven to bake for roughly 30 minutes, or until the surface is golden and an inserted toothpick comes out clean 
  5. While the cake is baking, make the margarita syrup by mixing together the tequila, triple sec, lime juice, and sugar until the sugar is completely dissolved 
  6. Once the cake is cooked through, transfer to a wire rack and poke several holes throughout it 
  7. Pour the margarita syrup over the cake and allow it to absorb while the cake cools 
  8. Next, make the icing by beating together the butter and half of the icing sugar 
  9. Once combined, add the remaining icing sugar, tequila, lime juice, and salt, and continue mixing until light and fluffy 
  10. When the cake has completely cooled, cover it in the tequila icing and finish with a final grating of lime zest over the top
