Smirnoff Kissed Caramel Cupcakes

Fancy getting in the festive spirit? Well we have been and we are getting creative with our Smirnoff Kissed Caramel vodka. We have perfected the most delicious caramel cupcake recipe that will leave your guests in mouth-watering awe if not a food coma that’s been caused by our VIP caramel cupcakes.

Start by accumulating the following ingredients :

  • 155g butter, un-salted, soft butter
  • 115g caster sugar
  • 2 eggs, lightly beaten
  • 1 tsp vanilla extract
  • 115g self-raising flour
  • 1 tbsp milk

Now Let’s get baking,

  • Preheat the oven to 180°c / gas mark 4
  • Put the butter and caster sugar in a large bowl and combine/beat until the mixture is light and fluffy
  • Pour in small amounts of the lightly beaten eggs to the mixture and combine/whisk (adding and mixing small amounts at a time will avoid the mixture from splitting)
  • Pour in the Smirnoff Kissed Caramel vodka and combine
  • Sift in the flour and combine
  • Gently fold the mixture together until the ingredients are fully incorporated and the mixture is light and fluffy
  • Add the milk and fold gently into the mixture
  • The cupcake mixture should be smooth in consistency now, carefully spoon the mixture into cupcake cases making sure to leave 1-2 cm from the top to allow the mixture to rise
  • Bake in the preheated oven for 15-20 minutes, until the cupcakes are risen, golden and firm to touch
  • Leave the cupcakes in the tray for about 10 minutes, then carefully transfer to a wire cooling rack to cool completely

And for that extra VIP touch why not enhance the luscious kissed caramel flavour with some butter cream topping

Start by accumulating the following ingredients :

  • 150g unsalted soft butter
  • 1 tbsp of kissed caramel vodka
  • 280g icing sugar
  • 1-2 tbsp milk

Now let’s whip it up VIP style

  • Place the butter and kissed Caramel vodka in a large mixing bowl and whisk until soft and pale
  • Gradually sift in the icing sugar, beating well after each Slowly pour in the milk and continue beating the mixture until its light and fluffy
  • Spoon the mixture onto the cupcakes or place into a pipping bag and pipe mixture onto the cupcakes
