Aperitifs are to be drunk before a meal as they work to stimulate the appetite. There are a wide variety of drinks that can be used as an aperitif, but they will always tend to be dry and low in alcohol. Sugar and strong alcohol can restrict the appetite whereas bitter flavours of herbs and citrus rouse the tastebuds and prepare the body for food.

Digestifs are enjoyed after eating, following the dessert or cheese course. These drinks are designed to aid digestion by settling the stomach with a higher proportion of sugar and alcohol.
